I think, Pixar excluded, kid's movies have gone off the rails over the past decade. They're just all so contemptuous of their audience, ignoring the inherent whimsy of being a kid in favor of some really calculated, cynical stuff like constant pop culture references and blunt song licensing. My toddler niece reacted better to the old Disney Alice in Wonderland than to the likes of Shrek and the abysmal CGI Underdog. Kid's movies these days aren't made to be lasting classics, just quick money makers.

That's true in some respects, but I think the original Shrek wasn't marketed as a kids' movie until it came out on video (yes, we bought it on VHS that long ago!). It had swearing, more violence than the subsequent ones (that were dulled down and boring), and was more of a movie for an older audience. I would agree with you with some of these films, though; I absolutely hate the Alvin & the Chipmunks films, and I haven't seen Underdog.

We have had some gems, though, recently--including Coraline (well, more for an older audience, again), Princess and the Frog, The Tale of Despereaux, and How to Train Your Dragon is absolutely wonderful, my favorite film of the year so far.  :)  Cloudy with a Chance of Meatballs was a fun one, too.

My four-year-old is a discerning one, too; she prefers old Scooby Doo cartoons to much of what is produced today, and her favorite movies are classic Disney Robin Hood and Aristocats (as well as a few Pixar favorites). She does enjoy many of these films, though.

Of the ones I've listed that she's seen, though (including Shrek 4; I won't let her see Coraline yet, of course), she did get scared, which I think is a problem with movies made for children; the best kids' films that were semi-recently produced that don't scare (and are enjoyable), I think, are Mr. Magorium's Wonder Emporium and Curious George, both which she loved to see. Even Ratatoullie and Up have guns in them, and while we do watch the movies, I really don't like that one bit.
